Canopy is a great alternative to Pine Tree (east). This trail is named for the beautiful oak canopy the trail winds through. It rides well in both directions, but some prefer north to south. Although there are some small rocks and tight turns, Canopy is not particularly challenging.
If you prefer Blue trails over Yellow, consider the trifecta of Marsh Mallow-Speedway-Canopy if southbound (or the reverse if heading north). Enjoy
From Santos TH, take Pine Tree (Yellow) East, which is the right fork. A few dozen yards after the wooden "Inchworm" feature, stay straight to Canopy instead of turning left for Pine Tree. If you want to take Canopy going north, the trail entrance is off of Blue Highway near 25th Avenue at the TOS crossover.
