Cedar Ridge is the only true bike-legal singletrack within Umstead State Park. It's fast and flowy with a few steeper corners. The trail crosses the creek at the bottom, but don't let it dissuade you -- the "creekbed" is concreted and is easy to ride through except after very heavy rains.
